Yield
Controlling yields is crucial to producing wines that are both typical and express their terroir. Winegrowers know this well: that's why they work in their vineyards with various green harvests, such as the so-called "green" harvest, which involves cutting bunches of grapes in July. The remaining grapes will be even more concentrated and flavorful. Each appellation has a maximum yield limit in its specifications, which must not be exceeded.
