Still (wine)

A term that refers to "classic" wines as opposed to sparkling "bubbly" wines. In the Rhône Valley, most appellations are still wines. Only three AOCs produce sparkling wines: Saint-Péray (the only Cru that produces sparkling wine), Crémant de Die (made using the traditional method), and Clairette de Die.
