Reliage (Relier) / Binding

This operation is one of the many steps that the winemaker performs, month after month, to take care of his vines. Thus, after flowering, he lifts and ties the new shoots with rye straw ties to stakes that we call "échalas" or "paisseaux" (stakes). This allows the leaves and grapes to have more air and light.
