Mutage

This is the secret of our Vins Doux Naturels de Rasteau and Muscat de Beaumes-de-Venise! To obtain a sweet wine, rich in residual sugars, we stop the alcoholic fermentation by adding alcohol. This is called mutage or fortification in English. The term "Natural" refers to the sugars in wine, which are always the sugars naturally present in the grapes at harvest.
